Pangu butterflies and memories

The first cook of the Hotel Bassetti was called Maria, and she was the wife of Gino Bassetti, as well as my grandmother.
She was an extraordinary cook, a hard worker, a true Romagna 'zdora.
"How nice to sit down," she would say in the evening, when she finally came down from the kitchen, exhausted but satisfied, and sat in front of the television for half an hour before falling asleep.
His specialty, it is not difficult to imagine, were the typical dishes: piada, lasagna, cappelletti, cannelloni ...
And then there were the botched farfalle (cream, ragù and parmesan in abundance), which, rather anonymously, went unnoticed, without appearing in the elite of the most desired dishes.
Yet for me "pangù-style butterflies" won over everyone, and my grandmother knew it.
And it supported me in my battle: I wanted to officially rename them, in the menu, for all customers.
We fought for a long time but without success, because no one, besides the two of us, has ever known them as "pangu butterflies". Before now!
